From vine to wine

“Kind to the vines, kind to the wine”

To formalize the Domaine's cultural practices, always carried out with common sense, we have committed our wines to an organic certification process.

Ideally rooted at an altitude of 200 metres in a soil composed of Kimmeridgian marl, typical of this clay-limestone terroir, the vines benefit from multiple exposures: south, south-east, south-west and even due north for some.

Those that thrive on the upper slopes benefit from significant sunshine, ensuring the grapes ripen slowly and healthily.

We prioritize common sense to harvest quality fruit in a context where climate change impacts harvests. We adjust the harvest date for each plot, and thus guarantee optimal maturity .

We favor proven agronomy, avoiding following beliefs or passing trends. Our approach instead focuses on thoughtful adaptation to current climate realities.”

In the winery, vinification is minimally interventionist; we emphasize plot-by-plot work. The juices are gently transferred by gravity, without the use of sulfites or selected yeasts during alcoholic fermentation.

We bottle our wines without filtering them, guaranteeing their authentic expression.

We pay particular attention to aging, using barrels of the right age, capacity, and origin for each vintage. Our goal is to give the wine the time it needs to fully develop and reveal its full potential.


🌿 The Vine — The Thread of the Seasons


As the vine follows the rhythm of time, our work is part of a patient cycle, nourished by the seasons and repeated gestures.

The size

As soon as the leaves fall, we pick up the pruning shears again. Pruning structures the upcoming harvest, balances vigor, and prepares the vine for spring. It's a long job, often in the cold, but essential: it's where it all begins.

Lifting & Maintenance

The branches grow quickly; they must be lifted, tied up, and organized. The weather is monitored, the vines are protected from excesses, and the soil is maintained. This is the most intense period: from morning to night, the vine occupies all thoughts.

Disbudding & Soil Work

Out of winter until the beginning of lifting, we begin to disbud and work the soil. We select the buds, we aerate the vines, we keep the rows clean and alive. At the same time, we also begin the first liftings to accompany the growth of the branches.

Harvest

It's time to deliver the verdict. We taste the berries, choose the date, and pick them by hand. Each basket tells the story of a year of work, patience, and respect. After the harvest, the vines rest... and the work continues in the cellar.


🍷 Wine — Cellar Time


The harvest marks the end of work in the vineyard and the beginning of that in the cellar.
Fermentation, aging, bottling... everything is done here

Once the grapes are in the vats, fermentation begins naturally. We monitor the temperatures, we taste, we check the densities, we accompany the wine without rushing it. Each vat has its own rhythm, its own character. We ensure, day after day, that everything unfolds smoothly.

Barrel descent

After several months of aging, the wines are brought up to blend them. We do not filter our wines: instead, we fin them, a gentle method that allows them to clarify naturally without stripping them. This is the moment of truth: we taste, we adjust, we decide on the right moment for bottling.

Alcoholic fermentation

Once fermentation is complete, the wines are transferred to barrels for aging. This is a delicate step: the juices must be moved without oxygenating them, while maintaining all their purity. The wine settles, it settles, it begins to refine slowly.

Lifting & Collage

The final stage of the cycle, before resting in the cellar. The wine is bottled at the estate, without rushing. It is bottled with the same care as during pruning or harvesting: it is the culmination of two years of work. From vine to wine, everything is a matter of time, gestures, and respect.
